2 cups shredded cooked chicken, from 1 rotisserie chicken
1 cup each shredded pepper jack and cheddar cheese, reserve 1⁄2 cup for topping
1/2 cup crumbled blue cheese, reserve 2 tbsp for topping
1/4 cup finely chopped scallions or chives, reserve 1 tbsp for topping
Combine all ingredients, except those reserved and place in a 1-1⁄2 Qt casserole. Top with reserved cheeses. Bake 30 minutes at 375 until bubbly and completely heated through. Remove from oven, top with scallions and serve warm with bread, chips, or celery.
